Roasted Veggie & Black Bean Burrito

This is how the blog lady’s burritos looked; you shall see mine in a later post.

It took me 40 minutes to chop, dice, cube, mix, bake, and create this wonderful nutrient and fiber dense concoction.  Oh the healthy fats. Oh the wheat tortilla. Oh the sweet potato.  How do I love thee? Let me count the ways.  I love thee to the depth, breadth, and height my soul can reach when feeling out of sight. {Sonnet 43 by Elizabeth Barret Browning reference}.  I will later upload the recipe along with my own pictures of this delicious meal.  I’m going to be eating well for days!

Well, that was my lunch (At 4:05pm). 

Snack #1 (At 2/3pm):

  • .5 cup chocolate almond milk
  • 2 prunes
  • popcorn cooked in oil (about 6 – 7 cups)

I was starving when I ate this.  I had to use a lot of self-control as I waited for my lunch to roast. Try eating supper at 9pm the night before, staying up until 7am the next day, only drinking water during those 10 hours of consciousness, and waking up at 11:35am. Then when you wake, you barely eat anything.  It was a gift from God when my mum made popcorn.  This way I could be temporarily satieted and not use up a bucketload of calories.  Thank you, mum(:


I used: .75 of a mango, handful or so of fresh spinach, 1 lime, .5 cup water, 1 ice cube, and .5 tbsp. ginger root

My breakfast was delicious but simultaneously lacking.

Breakfast (At 12:45pm):

  •  Lean Green Smoothie w/ chia seeds and flax

Now this was tasty/healthy, definitely.  But it was all I had until 2-ish, and when I calculated, the total calories equaled 138 calories.  Don’t do that.  Have a big breakfast, guys (400 – 650 calories).  It’s not always possible, depending on your schedule, but aim for it.

Today being the fourth of July, our nation’s Independence Day, and the fourth day of my journey for a better lifestyle, I’m feeling pretty good right now.  I had an amazing work out last night,  I love my mum – we have our skirmishes, but we are getting along -, there is a party ensuing inside my tummy, and I love life again. Remember that feeling that I told you about when I began blogging again this summer?  Well it had gone away, but last night, as I looked in the mirror at myself doing a rep of ‘Seated Abdominal Crunch Leg Lifts’, I gladly re-proclaimed that love, that life.

Supper-time hopped in a car, drove down my street, and rang my doorbell at 7:30pm.  I wasn’t particularly hungry because of my amazing lunch, but I want to keep my metabolism revving so I fed myself.

Supper (At 7:35pm): Split pea vegetable soup, homemade, w/ .25 cup brown rice

Did I tell you that I made some raw brownie balls for the holiday?  Well I did.  They were very good and packed with good ingredients.  I ate three of them for dessert and had some almond milk for accompaniment.  Yum.
