I wasn’t sure what to have for supper, I love pancakes, I needed vegetables, I needed protein. I figured since I made some Chocolate Black Bean Pancakes a couple weeks ago that tasted delicious, this shouldn’t be that different. I was lying to myself. With everything I planned to blend into the mix, I knew it was going to be different.
Red cabbage, carrot sticks, onions, dried prunes, cocoa powder, raw oats, brown rice, black beans, arugula, baking powder, sea salt, garlic clove, nutmeg, chives, food processor. Yeah. It was that serious.
Surprise surprise! It came out pretty tasty. I had no idea what type of topping to add. Hummus? Agave nectar? Honey? Balsaimac Vinegar? It’s all very confusing when your eating vegetables..and pancakes. Tried the hummus. No. Honey? Yes!
It was perfect. The honey sweetness gave it just what it needed. Ah. I feel like this was a cheat meal. Sweetness and vegetables? It can’t be done!
