Almond and Quinoa Based Protein Pizza

Pizza magic in less than twenty-minutes?!  AMAZE-balls(:

This is a very flexible type of pizza.  You can add several things to your protein pizza base, sweet potato or pumpkin for instance.  It can be sweet as well, the base could include a mixture of vanilla, etc. For this recipe, you just need to know how to make a pancake.  Once you’ve got that done, you’re halfway there.


  • 1/8 cup of ground almonds
  • 1 tbsp of coconut flour
  • 1/2 cup of quinoa flakes (note: you can sub the quinoa with oats or barley)
  • 4 flax eggs
  • 1/8 cup of  coconut milk
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp sea salt
Blend all together and pancake fried as one giant pancake on a super super hot nonstick pan further nonsticked with a tsp. of coconut oil.
You can make one giant pizza, or grab a cake ring and cut out some circles.
You can top the pizza as you wish. Example: tomato paste or tomato sauce + onions + tomato + Daiya cheese + thyme.  Then spray some extra virgin olive oil of them (it’s optional but it ensures they’re crunchy at the end) and stick it in the fridge for ten minutes and there you go(:

    Oh my goodness I thought I made up the flax egg ha ha how naive. This is how I make pancakes plus rice milk! Nice to see some more recipes I can have!

      haha, yeah. But that’s awesome that you came up with it yourself as opposed to me who had to desperately Google search: “what is a substitute for eggs”
      Oh, I loveee vegan pancakes. I’ve done so many things with pancakes,it’s just..awesome. But yeah, you’re totally welcome to any and all recipes I have posted(:
