Real Whole Wheat Bread

Real Whole Wheat Bread / makes 1 loaf

  • 3 cups whole wheat flour
  • 1/2 teaspoon instant yeast
  • 1 1/2 teaspoons salt (perhaps less)
  • 2 tablespoons olive oil
  • 1 tbsp. chia seeds
  • 2 tbsp. milled flax seed
  • small splash of vanilla extract (about 1/4 – 1/2 tsp.)
  • ground cinnamon

Combine flour, yeast, and salt in a large bowl. Add 1 1/2 cups water and stir until blended; the dough will be pretty wet. Cover and let rise in a warm spot for 12-24 hours. The dough is ready when the surface is dotted with bubbles. *Note, the warmer your house the faster the rise time will be.

Lightly oil the inside of a 9×5-inch loaf pan. Add chia seeds, milled flax seed, vanilla extract, and cinnamon to dough and mix until all is combined. Pour the dough into the pan and gently settle it all in with a rubber spatula. Drizzle or brush the extra oil over the top and let the dough rise again, covered, for 1-2 hours in a warm spot. When dough is ready, pre-heat oven to 350F.

Bake until the bread is golden brown and is hollow-sounding when tapped, about 45 minutes. Immediately turn the loaf out of the pan onto a wire rack and let cool before slicing.
